Spinach and Black Bean Burritos

Ingredients
Filling
- 2 tsp olive oil
- 2 small onion, diced
- 4 cloves garlic, minced
- 4 cups cooked black beans
- 8 cups spinach, chopped
- 1 cup salsa
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 2 tbsp lime juice
Optional Avocado-Lime Crema
- 1 ripe avocado
- 2 tbsp Greek yogurt, nonfat
- 1 tbsp lime juice
- 1 tbsp water
- pinch garlic powder
- pinch ground cumin
- 2 tsp apple cider vinegar
- salt, to taste
- pepper, to taste
- cilantro
- 6 large tortillas
Instructions
- In a large skillet or large soup pot, heat olive oil over medium heat.
- Sauté onion for 5 minutes until softened.
- Add garlic, cumin, and smoked paprika; cook until fragrant for about 1 minute.
- Stir in black beans and salsa; simmer for 5 minutes until warmed through.
- Add spinach, put the lid on and cook until wilted.
- Mash the mixture lightly with a fork for a creamy yet textured filling.
- Finish with lime juice, salt, and pepper.
- Optional: Make the Avocado-Lime Crema: Blend or mash avocado, Greek yogurt, lime juice, water, garlic powder, cumin and apple cider vinegar until smooth. Add salt, and pepper to taste. Add fresh cilantro for brightness if desired.
- Assemble the Burritos: Warm tortillas on a skillet to make them pliable. Spread a spoonful of the avocado-lime crema (if using) on each tortilla. Layer with the spinach and black bean filling. Add garnishes such as pickled red onions, pumpkin seeds, and fresh herbs for extra flavor. Fold in the sides and roll tightly into burritos.
